TGIF

HAPPY FRIDAY!!

I'm so glad it's Friday!! It's been a tough week at work because of layoffs in the company. I'm thankful that I wasn't laid off, but I do pray for those that were. I'm excited that we don't have anything planned for this weekend except working around the house. Sound's like fun, huh!! :)

So, I have a question for the few of you that read this blog...what are some dinner ideas that you use for nights when you get home late (like after 6:30) and still need to cook dinner? I feel like I've been a slacker because I've not cooked dinner much lately. We've grabbed take out or something similar, but I've not actually been in the kitchen cooking (or at least I don't feel like I have). I need some ideas of things that are not to labor intensive or take forever to prepare...these are the days of simplicity people.

I'm looking forward to some comments about dinner ideas, so don't disappoint!!

I love cooler weather because soups are soooo easy.

brown 1 lb. hamburger meat, drain and set aside

you will also need the following..
1 onion chopped
2 stalks celery chopped
4 cups chicken broth
4 cups water
1 can tomato sauce (15oz size, I think...)
3/4 cup elbow mac. noodles
1 bag frozen mixed veggies

bring all to boil. once onions, noodles, and celery are tender add hamburger meat and simmer.

ENJOY!!!

Sloppy Joes . . always and forever . . . my mom's version is sooo easy:

take your hamburger (i actually don't know how to cook hamburger . . so how ever you would cook it to make it all crumbly . . about a pound of it) . . mix in a can of tomato soup, the onions and about 1/4 of the broth from a can of french onion soup, some red pepper flakes and some garlic . . . woah. is that easy!!!

My other go to, a much lighter go to, is quinoa with some beans and you could add mear or whatever. Its similar to rice/couscous/etc but it has a really rich woody taste, cooks in like 5 minutes and is complete protein . . . find it at your local grocery store! :)

and of course . . no one will ever shy away from breakfast for dinner . . . pancakes anyone?

Nothing is easier than spaghetti with meat sauce! Just brown some ground beef or turkey and put it in some spaghetti sauce. Season more if you want, but most sauces are already pretty good! If you want to spice it up you could always replace the ground beef or turkey with sausage!

You can brown the meat while you're boiling the pasta! Shouldn't take more than 15- 20 minutes to cook the whole thing.

Have you tried those Banquet Crock Pot things? They are really good if you don't mind bagged stuff...

and you can always make other stuff in the crock pot, too. i am a fan of the crock pot.

Poppy Seed Chicken Casserole
Serves: 6

• 6 skinless, boneless chicken breast halves (baked and cut in pieces) You can also leave them whole if you prefer then serve 1 chicken breast per person.
• 1 (10.75 ounce) can condensed cream of chicken soup
• 1 (8 ounce) container sour cream
• salt and pepper to taste
• 8 ounces buttery round crackers, crushed
• 1 1/2 tablespoons poppy seeds
• 1/2 cup butter, melted

DIRECTIONS:
1. Preheat Oven to 350 degrees
2. Place the cooked/diced chicken breasts on the bottom of a 9x13 inch baking dish sprayed with a nonstick cooking spray. In a bowl combine the soup and sour cream. Pour or spoon mixture over the chicken. Sprinkle salt and pepper on top.
3. Mix the poppy seeds, crushed crackers, and melted butter together and sprinkle mixture over the chicken. Bake uncovered in the preheated oven for 30 to 45 minutes. Let stand a few minutes before serving. Serve over Egg Noodles.
